This simple recipe can be used with just about any plain nut, such as walnuts, almonds, pecans, cashews, or peanuts. They should be plain so the ASM spice will be the feature flavor on the nut after toasting.

Ingredients:

1 pound

selected nut(s) or pretzels

1

1 Tbsp

 

Egg white

Your choice of ASM spice: any Buffalo Dust or Cajun or Southwest or Island Spice

Parchment paper to line cookie sheet

Directions:

Make your own version of trail mix with any ASM spice. Heat oven to 350. Place egg whites in a large mixing bowl. Use a hand mixer to beat egg whites until they form soft peaks. Add nuts to the egg whites. Stir gently to coat the nuts with egg whites. Sprinkle ASM spice over nuts and any crunchy snack like pretzels or sesame seeds, etc. Stir gently until nuts are coated.  You may want to add more spice before putting in the oven if you want big flavor. Spread nuts in a single layer on cookie sheet with parchment paper.  Bake 10-12 min. Check at 10 min so they don’t get overdone. Sprinkle additional spice when you take out of oven. Cool on sheet. Enjoy!

NEED A SPEEDY VERSION? SPRAY NUTS (or pretzels) USING PAM COOKING SPRAY. SPRINKLE WITH ASM SEASONING. PLACE IN SINGLE LAYER ON COOKIE SHEET. LIGHTLY SPRAY AGAIN. SPRINKLE SEASONING.  BAKE AND CHECK EARLY SO THEY DON’T BURN.  THE NUTS WILL TASTE OILY IF OVERDONE.

4 Corners Southwest on Sea Scallops

Pat dry your choice of any firm seafood. Coat seafood with 1-2 Tbsp of 4 Corners Southwest Seasoning, shake in a bag. Sautee in hot skillet with light oil, Turn gently after 1 minute, cook 2 additional minutes to keep them tender. Leave in warm skillet but remove from heat to finish cooking. Serve on bed of rice and beans or your favorite grain.
