RECIPE: 4 Corners Southwest Fajitas Recipe
This recipe can be used with chicken, or pork, or beef, or shrimp
1 Tbsp 4 Corners Southwest spice blend
2 pounds of selected protein - chicken thighs or breast
place protein in a plastic bag. sprinkle 1 Tbsp 4 Corners seasoning in the bag.
Shake thoroughly to coat the protein. Let sit for 15 minutes.
1 red pepper and 1 green pepper (other colors are fine too) slice length-wise thinly.
Sprinkle with 4 Corners SW Seasoning separate from raw chicken.
Let sit for 10 minutes.
If grilling, place on high heat for 3-4 minutes on each side. Move to top rack of grill or to side of grill out of direct heat so chicken cooks low and slow approximately 20-25 minutes. Use food thermometer to check for doneness - internal temp of 165 degrees.
Sautee peppers in a separate skillet with small amount of oil 5-10 minutes to preferred tenderness.
We recommend you serve this with black beans and rice. Add sour cream and guacamole on the side if you like. Enjoy!

4 Corners Southwest on Sea Scallops
Pat dry your choice of any firm seafood. Coat seafood with 1-2 Tbsp of 4 Corners Southwest Seasoning, shake in a bag. Sautee in hot skillet with light oil, Turn gently after 1 minute, cook 2 additional minutes to keep them tender. Leave in warm skillet but remove from heat to finish cooking. Serve on bed of rice and beans or your favorite grain.
