What You'll Need
1½–2 pounds fresh vegetables
2 eggs
60-Second Pickle Panko Breading
Cooking spray or a small amount of oil
Your favorite dipping sauce
How to Make Them
Preheat your oven to 425°F.
Wash and thoroughly dry your vegetables. Cut them into bite-sized pieces.
Beat the eggs in a shallow bowl. Add the Panko Breading to a second shallow bowl.
Dip each piece of vegetable into the egg, then coat it with the Panko Breading. Press the coating lightly onto the vegetables to help it stick.
Arrange everything in a single layer on a parchment-lined baking sheet. Give the vegetables a light coating of cooking spray or drizzle with a small amount of oil.

Arrange the breaded vegetables in a single layer and cook at about 400°F, working in batches so you don't overcrowd the basket.
